WINEMAKING
Harvested by hand in the first decade of October, its grapes, once softly destemmed, undergo a maceration of about 14 days. During this period, the wine also completes alcoholic fermentation at a temperature no higher than 20°C, and is then introduced into barriques, where malolactic fermentation finishes. Subsequently, the wine undergoes an additional 6 months of aging in wood and resting in the bottle.
